Wonderful Sweet Scarlett’s Tropical Grapefruit Salad
23 cups of Butter Lettuce
A couple sprigs of Italian flat leaf parsley
1 Grapefruit, peeled and cut into sections
Handful of Blueberries
12 Tbsp of freshly grated Coconut
2 tbsp of sliced Almonds
Handful of peeled Edamame
1 cubed Avocado
½ cubed Mango
1 cup cooked Quinoa
Tropical Dressing:
¼ cup grapefruit juice
¼ cup pineapple juice
¼ cup of Olive Oil
1 tsp Agave
Pinch of Sea Salt & Black pepper
Rinse & cook Quinoa according to package directions. Let cool. Assemble all ingredients in a
salad bowl. Toss.
